Avocado & White Beans on Sourdough

Breakfast ideas are one of the most common requests that I receive - so this one's for you!

This recipe is incredibly easy to make, packed with fibre and protein, and of course delicious. Perfect for breakfast or lunch, you choose.

 

AVOCADO & WHITE BEANS ON SOURDOUGH

 

Serves: 2

Ingredients
400g can cannellini beans, drained and rinsed
1/4 red onion, diced
Zest of 1 lemon 
Juice of 1/2 lemon
1 tsp Dijon mustard
1 tsp olive oil
1 avocado 
4x slices of sourdough bread, toasted
1/4 cup chopped coriander 
1 tsp chilli oil 


Instructions:

  1. In a mixing bowl, combine the cannellini beans with the diced red onion, lemon zest, lemon juice, Dijon mustard, and olive oil. Mix well. 

  2. Spread the avocado evenly over the slices of sourdough. Top with the bean mixture. Sprinkle over coriander and drizzle a small amount of chilli oil over the top. Enjoy! x
