Buckwheat & Berry Breakfast (GF & DF)

I recently asked my community what they wanted to see more of, and high on the topic request list was recipes!

This Buckwheat & Berry breakfast is a real winner. Plus who doesn’t love an alliteration?!

This recipe ticks all the boxes if you have health specific requirements. It’s gluten free, dairy free, and high in protein. Plus it is SO quick to make. 

 It is quick, but it requires soaking time! So please read the recipe in advance.

 

BUCKWHEAT & BERRY BREAKFAST

 

Serves 1

Ingredients
1/3 cup buckwheat groats
2 Tablespoons chia seeds
1 Tablespoon LSA mix
1 serve Vanilla protein powder
1 Tablespoon cacao nibs
1 Tablespoon peanut butter or tahini
3/4 cup of almond milk
3/4 cup of frozen berries
Water, used for rinsing and soaking

Instructions:

  1. The morning before you want to eat this breakfast. Soak 1/3 cup of buckwheat in water. (I put it in a jar and leave it on the bench.)

  2. The evening before you want to eat this breakfast, rinse the soaked buckwheat under water. Then add the buckwheat and chia seeds to a bowl, with enough water for the chia to get wet. (Again, I leave this on the bench overnight.)

  3. In the morning, heat some frozen berries and milk of choice on the stove until just warm. (or use fresh berries and skip the heating).
     

  4. Then add all your ingredients to the buckwheat & chia bowl, give it a good stir, and enjoy! 

 

The soaking step takes two seconds, I promise.
