Festive Christmas Salad

Getting into the holiday spirit, I thought I'd share a delicious Christmas salad with you.

You know me, I'm all about those salads…

And lets be honest, if it doesn't have pomegranate, can you even serve it at Christmas?!


Festive Rocket and Haloumi Salad with Pomegranate and Roasted Veggies!

Ingredients

  • 4 cups fresh rocket

  • 200g haloumi cheese, sliced

  • 1 tbsp olive oil

  • 2 tbsp honey

  • 100g feta cheese, crumbled

  • 1 cup pomegranate seeds

  • 1/2 cup walnuts, chopped

  • 2 figs, cut into quarters


For the Roasted Vegetables

  • 1 large parsnip, peeled and cut into sticks

  • 2 large carrots, cut into sticks

  • 1 cup fennel, thinly sliced

  • 2 tablespoons olive oil

  • Salt and pepper, to taste


For the Dressing

  • 3 tablespoons flaxseed oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon honey


Method

  1. Preheat the oven to 200°C.

  2. Toss the parsnip, fennel and carrot sticks with olive oil, salt, and pepper. Spread them on a baking tray and roast for about 20-25 minutes or until golden brown and tender. Allow them to cool.

  3. In a small bowl, whisk together flaxseed oil, apple cider vinegar, Dijon mustard and honey. Set aside.

  4. Heat a pan over medium heat with olive oil. Cook the haloumi slices for 1-2 minutes on each side with a drizzle of honey until golden brown. Set aside.

  5. In a large serving bowl, combine the fresh rocket, roast fennel, parsnip and carrot, halloumi slices, and crumbled feta. Drizzle the dressing over the salad and toss gently to combine.

  6. Sprinkle pomegranate seeds, walnuts and figs over the salad for a burst of sweetness.

  7. Serve the salad immediately, with your choice of protein. ENJOY!
