Strawberry Kefir Chia Pudding

I want to share with you one of my favourite gut healthy recipes that is easy to prep in advance, and also makes the PERFECT breakfast or filling snack.

Drumroll, please... introducing my latest obsession.... STRAWBERRY KEFIR CHIA PUDDING

The secret ingredient is KEFIR, a probiotic-rich yoghurt. Plus, this recipe is also high in protein - a winner all round really!


Ingredients

1/4 cup chia seeds
4 Tbsp collagen powder
1 cup kefir
1/4 cup soy milk (adjust as needed for desired consistency)
1/2 tsp ground cinnamon
1/2 cup fresh strawberries, sliced (for topping)

 

Method

1. In a mixing bowl, combine the chia seeds, collagen, kefir, and ground cinnamon. Mix well. 

2. Cover the bowl and refrigerate the mixture for at least 4 hours or preferably overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency. If the pudding seems too thick, you can add a dash of soy milk to achieve your desired consistency. Mix well.

3. Top the chia pudding with the sliced strawberries and enjoy!
