Warming Quinoa Porridge

Crisp mornings are the perfect time for warm nourishing breakfasts. This porridge has a delicious blend of cinnamon and apple, and uses quinoa flakes rather than traditional oats. Quinoa is a great gluten free option, plus it is one of few plant based sources of complete protein. This porridge is so simple to make, it literally takes minutes! I've added almonds here, but any variation of topping would work well. Tastes best eaten in warm morning light.

Serves 1

Ingredients:

  • 1 apple, chopped

  • ¼ cup quinoa flakes

  • ½ cup of nut milk

  • ½ cup boiling water

  • 1 tsp flaxseed

  • ½ tsp cinnamon

  • 6 almonds, chopped

  • ½ tsp rice malt syrup

Instructions:

  1. In a small saucepan over medium heat combine the apple, quinoa flakes, nut milk, water, flaxseed and cinnamon.

  2. Cook for about 5 minutes, stirring frequently.

  3. Turn off the heat, and spoon into a bowl.

  4. Top with chopped almonds, drizzle with rice malt syrup, and enjoy!
